Terroir and Heritage of Spumante Alta Langa Autessa®
The Alta Langa DOCG Autessa® Metodo Classico embodies the premium standard of sparkling winemaking in Piedmont, interpreted by the Cordero di Montezemolo winery. While the estate's DNA is historically rooted in the exceptional red wines of the Alba region, the craft of producing top-tier sparkling selections remains a true pillar of the regional wine heritage. This journey culminated in 1987 with Giovanni Montezemolo's vision, executing the winery's very first sparkling fermentations. Tailored for a niche of collectors through intentionally limited volumes, this cuvée offers the perfect blend of technical discipline, aromatic definition, and complete food pairing versatility.
High-Altitude Agronomic Features and Metodo Classico Protocol
The fruit for this traditional method sparkling wine is sourced from a strict parcellized selection of Chardonnay and Pinot Noir grapes, grown at elevations exceeding 400 meters above sea level in the highest sectors of the Langa hills. This precise altitude guarantees sharp diurnal temperature shifts, an essential agronomic factor that locks a vibrant, tensed structural acidity into the clusters. In the cellar, the primary fermentation of the free-run must involves gentle neutral oak barrel handling. The base wine is then bottled for the second fermentation according to traditional standards, undergoing an extended aging period on its fine lees that spans 4 to 5 years (48-60 months) to encourage cell autolysis prior to disgorgement.
Sensory profile of the Alta Langa
The synergy between the calcareous soil matrices of the Alta Langa and disciplined long lees maturation shapes a clean organoleptic identity with extensive structural depth.
- Appellation, Blend and ABV: Pinot Noir, Chardonnay Alta Langa DOCG / 12.50% ABV.
- Visual Presentation: Luminous straw yellow color highlighted by clear golden reflections, displaying a very fine, tight, and exceptionally persistent perlage in the glass.
- Aromatic Bouquet: Broad and deeply complex on the nose, showcasing dominant notes of fresh bread crust, yeast, and candied white-fleshed fruits, layered with elegant undertones of toasted hazelnuts, melted butter, and subtle mineral traces of wet stone.
- Palate Texture: Dry, tensed, and driven by a striking vertical framework. The mid-palate delivers a velvety, remarkably creamy texture where a vibrant acidity drives an elegant drinking experience leading into a long, savory, and perfectly clean finish.
Food Pairings and Serving Recommendations
The excellent structural fullness and crisp framework of this Piedmont sparkling wine support outstanding versatility throughout the entire meal.
- Classic Pairings: Stands as an exceptional choice for opening wine service as a high-end aperitif. At the table, it pairs naturally with raw seafood, amberjack tartare, fresh oysters, shellfish, structured Mediterranean seafood risottos, and delicate fried seafood or vegetables.
- Serving Conditions: To optimize the delicate sparkle and maximize the fresh aromas of the bouquet, serve in a wide traditional method glass at a steady chilled temperature of 6 - 8°C.
