The free-run juice undergoes its primary fermentation cycle and monitored malolactic fermentation entirely inside French oak barriques. Subsequently, the mass undergoes an aging period on the lees within the small casks, where regular weekly bâtonnage routines promote cellular autolysis and enrich volume on the palate. After the tirage, the second fermentation in the bottle takes place in the historic cellars of the maison, undergoing an ultra-long resting period on the lees that seals the stylistic excellence of this historic maison Gremillet, preceding disgorgement and Brut dosage to define a benchmark for the category of Champagnes of great complexity.

- Appearance: Luminous straw yellow coat with brilliant golden reflections. The perlage reveals itself as very fine, tight, and of constant persistence, crowned by a light and creamy mousse in the glass.
- Nose: Broad, intense, and deep spectrum. The nose reveals a refined profile dominated by consistent aromas of summer white flowers, vanilla, and fine wood, integrated with elegant nuances of licorice, sweet spices, and fragrant hints of baking bread.
- Palate: The palate reveals an enveloping, taut character endowed with an important volume.
