The Regional Interpretation of Langhe DOC Riesling
The Langhe DOC Riesling fulfills a historic project and a deep passion of the Grasso family, introduced to enrich the production chronology of the Ca’ del Baio winery. This still white wine stems from the desire to engage with one of the world's most noble varietals, adapting to the pedoclimatic specificities of the Langhe. Agronomic management identifies the coolest and most ventilated areas of the estate to allow a slow ripening of the clusters, preserving a sharp acidity and translating the soil's identity into a pour of rare verticality.
Agronomic Notes and Aging Protocol
The vineyards, planted in 2008, are cultivated on highly calcareous soils with high percentages of sand in the Treiso district, benefiting from an exclusively northern exposure to limit direct sunlight. The manual harvest takes place at the end of September. In the cellar, vinification is carried out in temperature-controlled stainless steel tanks to protect the varietal purity of the fruit. The evolutionary path involves a 15-month aging period before commercial release, a time frame necessary to stabilize the wine and encourage the development of its tertiary profile.

The combination of the northern slope and the limestone-sandy matrix of the soils imparts a taut, mineral, and far-reaching organoleptic precision to this Rhine Riesling.

- Visual Assessment: Pale straw-yellow hue, enriched by sharp and brilliant greenish highlights that testify to its youthful brilliance.
- Olfactory Framework: Intense, broad, and aromatic bouquet, characterized by consistent notes of pineapple and mango, integrated by subtle petrol nuances destined to amplify over time.
- Palate Characteristics: The entry is dry, delicate, and extremely elegant. The mid-palate development shows a perfect acid-alcohol balance, closing with a clean, taut finish and excellent savory persistence.

- Stable Pairings: It pairs excellently with light seafood or vegetable appetizers, baked freshwater fish, traditional snail-based preparations, and selections of fresh, soft cheeses.
- Serving Method: To promote the expression of the aromatic bouquet and enhance the tension of the palate, a serving temperature of 8°C is recommended.
Temporal Evolution and Storage
The selection presents itself ready and stable upon release, yet possesses remarkable aging potential, allowing it to develop positively for several years in the bottle. For proper maturation, horizontal bottle storage is recommended in dark environments at a constant temperature.
