Ca’ del Baio obtains this still white wine from vines that have reached full biological stability, an essential agronomic condition to extract raw material rich in dry extracts and endowed with longevity. The winemaking approach enhances the natural progression of the varietal in its purest form, balancing the wine's body with a distinct mineral freshness.
Pedoclimatic Details and Cellar Protocol
The vineyards were planted in 1989 on soils composed of calcareous-clayey gray marls with an optimal western exposure. The manual harvest takes place in mid-September. In the cellar, the must undergoes alcoholic fermentation in temperature-controlled stainless steel tanks, combined with partial aging in small oak barrels to enrich the tertiary spectrum without weighing down the palate. The process is completed with natural stabilization and targeted bottle aging before commercial release, scheduled for the year following the harvest.
