The Langhe DOC Chardonnay Luna d’Agosto embodies the most youthful and dynamic spirit of the Ca’ del Baio winery. This still white wine stems from a harvest carefully timed to capture the maximum fragrance of the fruit before the full autumn ripening. Agronomic management enhances a natural mineral vein imparted by the unique pedoclimatic conditions of the vineyards of origin, offering an aromatic bouquet that echoes the scents of the summer season.
Agronomic Notes and Cold Cellar Protocol
The vineyards, planted between 2006 and 2012, are cultivated on soils composed of calcareous-sandy gray marls, benefiting from southwestern and northwestern hillside exposures. The manual harvest takes place in early September. The technical protocol involves a gentle pressing of the clusters and fermentation carried out entirely in temperature-controlled stainless steel tanks. In order to safeguard the natural acidity and the responsiveness of the palate, malolactic fermentation is intentionally blocked.

Vinification conducted exclusively in stainless steel combined with the prevention of malolactic fermentation imparts a taut, well-defined organoleptic precision and remarkable fruit fragrance to the varietal.

- Stable Pairings: Served chilled, it proves to be an ideal solution for an apéritif. At the table, it accompanies light appetizers based on white meats, vegetarian first courses, grilled or baked fish main courses, and fresh cheeses.
- Serving Method: To optimize the bouquet's fragrance and the liveliness of the pour, a serving temperature between 10- 12°C is recommended.
Temporal Evolution and Storage
The selection expresses its maximum appeal in its youth, presenting itself ready for enjoyment in the early months of the year following the harvest. Properly stored, it keeps its vibrant characteristics intact for up to two years from bottling. Horizontal bottle storage is recommended in a dark environment at a constant temperature.
