The Monovarietal Philosophy and Identity of Chardonnay Il Borro
The Chardonnay Il Borro Valdarno di Sopra DOC masterfully demonstrates the agronomic vision and monovarietal philosophy of the estate [0.1]. This still organic white wine stems from the firm commitment to bring an international grape variety to its ultimate qualitative expression, while imparting the stylistic signature and character typical of all the property’s prominent flagship wines. The project translates into a signature bottle where an innate elegance and a refined aromatic complexity merge with an important structural depth, redefining quality standards for white varietals within the Valdarno district.
2022 Vintage Climate Trend and Cellar Protocol
The growing cycle of the 2022 vintage was marked by a distinctly hot and dry climate trend during the summer months. This microclimatic scenario was timely mitigated by the abundant rainfall recorded in August and September, regular rains that did not hinder the delicate manual harvest operations. Although the atmospheric conditions contained overall vineyard yields, the exceptional health of the clusters allowed the winery to achieve expressive musts endowed with intense aromas. In the cellar, fermentation and the subsequent aging path develop by combining stainless steel with a measured rest in fine oak to encourage perfect stabilization and tertiary evolution, preserving an alcohol content of 13.50% Vol.
Sensory Profile and Organoleptic Assessment
The interaction between the schistose-clay matrix of the soil and the calibrated horizontal rest in fine oak outlines an organoleptic framework of imposing volume and sharp regional precision for this Toscana white wine.
- Blend and Classification: 100% Chardonnay Valdarno di Sopra DOC
- Analytical Data (2022 Vintage): Alcohol Content: 13.50% Vol.
- Visual Assessment: Intense, brilliant golden yellow color of outstanding crystalline luminosity, characterized by a dense viscosity and well-defined legs upon swirling in the glass.
- Olfactory Framework: Broad, clean, and markedly deep bouquet. Consistent scents of ripe yellow-fleshed fruit, peach, apricot, and candied citrus stand out on the nose, perfectly integrated with elegant tertiary tones of pastry, toasted hazelnut, melted butter, and subtle hints of noble wood and vanilla.
- Palate Characteristics: The tasting reveals a rich, full-bodied profile endowed with an enveloping mouthfeel. The progression displays a complex architecture of excellent gustatory balance, where the vibrant freshness of the acidic backbone melts in perfect harmony with a supple structural smoothness. The pour finishes with a long, savory finish of outstanding mineral persistence.
Service Guidelines and Gastronomic Pairings
The thickness of the structural architecture and the aromatic richness of this signature Chardonnay qualify it as an ideal bottle for fine dining and for accompanying complex, elaborate preparations.
- Stable Pairings: It pairs magnificently alongside structured second courses based on baked fish, stewed crustaceans, and rich seafood or vegetable risottos. It excels paired alongside delicate preparations based on white meats, such as rabbit with herbs, noble terrines, and selections of medium-aged hard cow's or sheep's milk cheeses.
- Serving Method: To promote the development of the rich tertiary profile and maintain gustatory balance, the use of a wide tasting glass and a serving temperature of 10 - 12°C are highly recommended.
