The established vineyards rest on the historic districts of the north slope, rooted in dark sands composed of volcanic debris, pumice, and stratified ash. The high altitudes generate extreme temperature excursions between day and night, imprinting the clusters with an aromatic profile of sharp verticality. Constant mountain ventilation protects the canopy of the century-old vines, naturally minimizing moisture stagnation within the clusters.
