The primary fermentation cycle is managed through a strategic breakdown of the mass: 40% matures in stainless steel tanks to preserve freshness and acidic tension, while the remaining 60% undergoes the process in large wooden casks, where it also completes a partial malolactic conversion. Both portions subsequently face aging on the fine lees for a 7-month period prior to final blending.
