The PASITHEA ROSA Moscato Rosa DOC represents an extraordinary expression of a rare and precious native variety, interpreted by Cantina Girlan through the passito technique. The vineyards are situated on the highest and most ventilated hillside slopes of Oltradige, at an altitude of 500 meters above sea level. The constant air circulation of this hillside belt is an essential agronomic requirement to preserve the health of the clusters during the final phase of the growing season. The soil is composed of mineral-rich morainic deposits resting on a solid volcanic porphyry matrix—elements that impart remarkable olfactory complexity and an elegant acid-savory tension to the cuvée.
Technical Protocol: Natural Air-Drying, Winter Maceration, and Barrique Aging
The processing of the 2024 vintage follows an extended and rigorous timeline, oriented toward the maximum concentration of dry extracts. The harvest is carried out manually in late October using small bins, where the clusters undergo natural dehydration. In mid-January, the grapes selected this way face an extended skin-contact maceration for two weeks, completed by gentle pressing. The primary fermentation cycle develops slowly due to the high sugar content of the must, until it stops spontaneously. The resulting liquid subsequently matures for 10 months in oak barriques, followed by an additional 6 months of stabilization in glass before its release.
