The PIZ ROSÉ Pinot Noir DOC embodies the alpine vocation of Cantina Girlan through a taut and refined interpretation of the celebrated Bourgogne variety. This selection originates from Pinot Noir vineyards situated at the highest altitudes of the estate, ranging between 550 and 650 meters above sea level. The name "Piz," which means "mountain peak" in the Ladin language, directly references the verticality and freshness of the territory of origin. The rows, featuring a predominantly eastern exposure, benefit from morning sunlight that encourages a gradual ripening of the clusters, preserving the integrity of the acidic profile.
Technical Protocol: Gravity-Fed Processing and Stainless Steel Aging Without Malolactic Fermentation
The processing of the 2025 vintage follows technological criteria aimed at maximizing extractive finesse and the stability of the aromatic heritage. The harvest is carried out manually, selecting clusters within small bins. Following destemming, press filling is conducted exclusively by gravity, eliminating mechanical pumping actions. The must remains in contact with the skins for just a few hours—a short pre-fermentative maceration designed to extract a subtle chromatic shade. The fermentation cycle and subsequent maturation are carried out in stainless steel tanks on the fine lees. Malolactic fermentation is intentionally avoided, safeguarding the natural acidic tension of the wine prior to bottling.

The altitude of the Oltradige slopes combined with vinification conducted exclusively in stainless steel imparts a sharp organoleptic precision of distinct mountain elegance to the variety.
