Description

The Regional Heritage and Origin of Moscato d’Asti 101 DOCG

The Moscato d’Asti 101 DOCG represents a historic benchmark for the frizzante wine production of the Ca’ del Baio winery. This selection takes its name from cadastral plot number 101, a hillside vineyard historically reserved for family celebrations. The agronomic approach aims to highlight the natural aromatic qualities of the fruit, translating the varietal's integrity into a light, fragrant, and harmoniously progressive pour.

Cellar Notes on Fermentation Management

The vineyards, planted between 1953 and 1994, thrive on soils composed of gray marls with a calcareous-sandy matrix across diverse hillside exposures. The manual harvest takes place during the first days of September to preserve the grapes' natural acidity. Following gentle pressing, the must undergoes partial fermentation in stainless steel autoclaves. The process is halted via refrigeration upon reaching the desired parameters, locking in the grape's natural residual sugars and ensuring the typical, delicate effervescence.

Sensory Profile of Moscato sweet Piedmont wine

The synergy between old vines and temperature-controlled cellar technology outlines an organoleptic framework marked by sharp precision and elegance.

  • Blend and Alcohol Content: 100% Moscato Bianco / Moscato d’Asti 5.50% Vol.
  • Visual Assessment: Brilliant straw-yellow color, characterized by a fine and pleasantly persistent effervescence.
  • Olfactory Framework: Intense and clean aromatic spectrum, distinguished by clear notes of ripe apricot and floral nuances of linden blossom.
  • Palate Characteristics: The tasting reveals a sweet, delicate profile supported by a refreshing, balanced acidity. The mid-palate development closely mirrors the nose, closing with a clean, lasting finish.

Service Guidelines and Gastronomic Pairings

The moderate alcohol content and aromatic complexity of this Moscato allow for both classic pairings and culinary experimentation.

  • Sweet Pairings: It traditionally accompanies leavened desserts like brioche and panettone, pastry cream or chantilly preparations, and fresh fruit tarts.
  • Savory Pairings: It displays excellent synergy with savory appetizers featuring preserved fish, such as anchovies and mackerel, or paired alongside soft cheeses and salami.
  • Serving Method: To optimize the bouquet's fragrance and the liveliness of the effervescence, a serving temperature of 8-10°C is recommended.

Temporal Evolution and Storage

This wine offers maximum aromatic expression in its youth, presenting itself ready for enjoyment in the months immediately following the harvest. To preserve its quality, horizontal bottle storage is recommended in a dark environment at a constant temperature.
