This selection takes its name from cadastral plot number 101, a hillside vineyard historically reserved for family celebrations. Cellar Notes on Fermentation Management
The vineyards, planted between 1953 and 1994, thrive on soils composed of gray marls with a calcareous-sandy matrix across diverse hillside exposures. The manual harvest takes place during the first days of September to preserve the grapes' natural acidity. Following gentle pressing, the must undergoes partial fermentation in stainless steel autoclaves. The process is halted via refrigeration upon reaching the desired parameters, locking in the grape's natural residual sugars and ensuring the typical, delicate effervescence.
