The Dolcetto d’Alba Lodoli DOC represents the winemaking core of the Langhe, interpreted by Ca’ del Baio as an authentic expression of conviviality. Agronomic management enhances the purity of the varietal, offering a linear and unadulterated taste. The technical objective is to preserve the fruit's original fragrance, ensuring a clean pour that reflects the gastronomic heritage of Piedmont.
Agronomic Parameters and Fermentation Management
The vineyards, planted in 1961, thrive on medium-textured calcareous-sandy soils in the municipality of Treiso, benefiting from air circulation promoted by eastern, western, and southwestern exposures. The manual harvest takes place in mid-September. In the cellar, a vinification protocol conducted exclusively in temperature-controlled stainless steel tanks is adopted. The complete absence of oak aging safeguards the varietal freshness and ensures precise aromatic stability.

The wine offers maximum fragrance in its youth, presenting itself ready as early as the spring following the harvest, and keeping its qualities intact for two to four years.
