The Barbera d’Alba Paolina DOC expresses the agronomic character of the vineyards cultivated by the Ca’ del Baio winery in the Langhe region. This red wine originates from a calibrated blend of grapes from various estate parcels, an approach aimed at combining the unique characteristics of individual plots to achieve a harmonious final profile. The vinification highlights the natural, vibrant acidity of the grape variety, balancing it with a polyphenolic development that imparts smoothness and roundness to the wine's core.
Agronomic Notes and Aging Protocol
The vines, planted from 1960 onwards, thrive on medium-textured calcareous soils with significant sandy components. The rows benefit from constant ventilation thanks to multiple southeastern, southwestern, and western exposures. The manual harvest takes place during the first days of October. Following crushing and destemming, the must ferments at a controlled temperature in stainless steel tanks. The process is completed with a 12-month maturation period in large oak casks, followed by a stabilization period in the bottle before commercial release.

- Serving Method: To promote gustatory balance and allow the fruity core to unfold, a serving temperature of 14-16°C is recommended.
Temporal Evolution and Storage
The wine presents itself ready for enjoyment just over a year after the harvest, demonstrating an aging potential that guarantees an excellent holding capacity for a time frame between 5 and 8 years, extending even further in favorable vintages.
