The Elegance and Terroir of Barbaresco Asili Ca’ del Baio
The Barbaresco Asili Ca’ del Baio represents the historical foundation and the winemaking philosophy of the estate. Sourced from premium parcels within the world-renowned Asili cru in the Barbaresco municipality, this red wine showcases the exceptional quality of the oldest family-owned vines. The viticultural approach focuses on highlighting the natural finesse and aromatic purity of the Nebbiolo grape, creating a balanced and deeply expressive profile.
Agronomic Features and Cellar Management
The vineyard management takes advantage of distinctive blue marl soils, rich in limestone and clay, combined with a highly favorable South-West exposure. The vines were planted between 1957 and 1999, contributing to the deep structural complexity of the fruit. Harvesting is carried out by hand between late September and early October. The cellar operations are specifically tailored to safeguard the precise varietal markers of the grape, integrating the structural tannins through managed oak aging before final bottle refinement.
Sensory Profile of this Premium Piedmont red wine
The interaction between the Langhe terroir and precise temperature control yields a clean, elegant, and standard-setting organoleptic character.
- Appellation, Blend and ABV: 100% Nebbiolo / Barbaresco DOCG / 13.50% ABV.
- Visual Presentation: Luminous garnet red color featuring characteristic orange highlights that reflect its traditional aging path.
- Aromatic Bouquet: Deep and persistent nose, displaying primary notes of marasca cherry and floral violet, complemented by refined hints of black pepper, licorice, and goudron.
- Palate Texture: Dry, warm, and exceptionally smooth on the entry. The mid-palate reveals a velvety, rich mouthfeel supported by excellent depth and a lingering finish.
Food Pairings and Serving Recommendations
The solid framework and precise acidity of this Nebbiolo require structured dishes capable of balancing its tannic composition.
- Classic Pairings: Pairs perfectly with roasted or braised red meats, traditional stews, wild game, and mature, hard cheeses.
- Evolutionary Profile: As the tertiary elements develop with extended cellaring, this bottle transitions into an ideal meditation wine.
- Serving Conditions: Best served at a steady temperature of 18°C. Uncorking the bottle in advance is suggested to encourage full aromatic development.
Cellaring Potential and Storage Guidelines
This Barbaresco is approachable approximately three years after the harvest, though its peak window opens between 10 to 15 years in favorable vintages. To ensure accurate maturation, store the bottle in a horizontal position, shielded from light exposure and at a strictly constant temperature.
