Terroir and Agronomic Philosophy of Balioso Rosso Alto Livenza IGT
The Balioso Rosso IGT Alto Livenza expresses the freshest, most dynamic, and harmonious soul of the Carmenere grape variety in Friuli Venezia Giulia. This variety stands out for its vigorous leaf canopy combined with a controlled yield of just a few clusters per vine. Organic management protects the vineyard's ecosystem, where rows coexist in perfect balance with tall grass, becoming an ideal haven for wild hares. Unlike selections crafted for very long aging, Balioso is designed to enhance immediate expressiveness and fruit fragrance, combining excellent robustness with a supple, graceful drinkability.
Pedoclimatic Notes and Fractional Vinification Protocol
The vineyards are trained using the spurred cordon system on flat, heavily clay-based soils, characterized by the presence of "caranto"—a compact Pleistocene paleosol rich in limestone that provides the wine with a solid, savory foundation. The manual harvest selects clusters at the perfect point of phenolic ripeness, maintaining a total acidity of 6.50 g/l. In the cellar, alcoholic fermentation takes place entirely in temperature-controlled stainless steel tanks to preserve the integrity of the aromatic precursors. The evolutionary path involves fractional aging: 30% of the mass matures for 6 months in large oak casks, while the remaining portion rests in stainless steel, completing the cycle with 6 months of bottle stabilization to best express the style of the new wines of Friuli Venezia Giulia before release.
Sensory Profile of Balioso Rosso
The limited use of large oak and the processing carried out in stainless steel give the variety a taut, linear organoleptic precision with remarkably clean extraction.
- Blend and Alcohol Content: 100% Carmenere, 14.00% ABV.
- Appearance: Deep ruby red color, distinguished by a beautiful and vivid chromatic brilliance when swirled in the glass.
- Nose: Broad, intense, and clean bouquet. The opening, focused on aromas of ripe cherry, violet, and blackberry, is joined by balsamic nuances, undertones of underbrush, herbal hints, and a characteristic varietal touch of green pepper.
- Palate: Dry, fresh, and decisive on the palate. The mid-palate reveals a medium, round body, supported by a perfect balance between fruit softness and a silky tannic texture, leading the progression toward a fruit-forward and spicy finish of impeccable persistence.
Serving Guidelines and Food Pairings
The vibrant acidity and spicy character of this Carmenere ensure remarkable culinary versatility, making it ideal for pairing with flavorful, earthy dishes, as highlighted by sommelier Cristian Maitan.
- Perfect Pairings: Pairs excellently with pappardelle in wild hare sauce—a nod to the vineyard's biodiversity—and venison tartare served with blueberry sauces.
- Traditional Pairings: Finds a great match with pastrami on warm crusty bread and traditional Friulian dishes such as potato and sausage frico.
- Serving Recommendations: To enhance the fragrance of its fruit profile and the precision of the sip, we recommend using a medium-sized Bordeaux glass and a serving temperature of 14 - 16°C.
