Terroir and Organic Philosophy of Venit Carmenere Alto Livenza IGT

The Venit Carmenere IGT Alto Livenza expresses the most authentic and elegant soul of organic viticulture in Friuli Venezia Giulia. This vigorous grape variety, historically rooted in the borderlands between Veneto and Friuli, finds an ideal habitat in these soils, developing a dense leaf canopy alongside a deliberately restricted yield of grape clusters per vine. Agronomic management respects the natural balance of the vineyard, which coexists in harmony with tall grass, becoming a favored haven for wild hares. The project aims to elevate a complex variety, translating its varietal traits into a still red wine endowed with extraordinary expressive clarity and structural dynamism.

Agronomic Notes: Caranto Soils and Late-Ripening Technique

The vines are trained using the spurred cordon system on soils with a heavy clay matrix, characterized by the presence of "caranto"—a compact Pleistocene sedimentary paleosol rich in limestone and minerals that provides the wine with a solid, savory foundation. The harvest management follows a rigorous protocol: 50% of the clusters undergo a guided late-ripening process via cane-cutting, promoting a slow, natural appassimento of the grapes directly on the vine. In the cellar, following the manual harvest, the mass ferments at a controlled temperature to preserve the integrity of the fruit. The evolutionary pathway involves 100% maturation in large oak casks for 12 months, completing the cycle with 6 months of bottle stabilization before release.

Sensory Profile of the Carmenere

The interplay between the clay richness of the caranto soil, the on-vine overripening, and the use of large oak outlines an organoleptic profile of sharp precision and aromatic exuberance.

  • Blend and Alcohol Content: 100% Carmenere, 14.00% ABV.
  • Appearance: Intense and deep carmine red hue, embellished with vivid violet reflections that underscore its youthful color.
  • Nose: Fine, clean, and multi-faceted bouquet, focused on crisp notes of currant, wild strawberry, and violet, joined by a distinct herbaceous, botanical connotation and hints of medicinal roots.
  • Palate: The palate reveals a carefree, smooth, and extraordinarily responsive character. The mid-palate shows a medium and agile body, paced by a well-defined tannic texture that cuts through the center of the mouth, guiding the progression toward a fresh finish with nuances of cinchona bark.

Serving Guidelines and Food Pairings

The acidic freshness, fruity depth, and spicy-herbaceous character qualify this Carmenere as one of the most interesting expressions within the panorama of red wines of Friuli, demonstrating remarkable versatility at the table, as highlighted by sommelier Cristian Maitan.

  • Traditional Pairings: An ideal partner for local cuisine, it pairs beautifully with soft polenta accompanied by stracciatella cheese, sopressa salami, and pioppini mushrooms.
  • Earthy Pairings: It excels with rich first courses such as pappardelle in duck ragù, meat terrines served with toasted Tuscan bread, and nostalgic comfort dishes like boiled beef served with mashed potatoes.
  • Serving Recommendations: To enhance the fragrance of its varietal profile and the precision of the sip, we recommend using a large Bordeaux glass and a serving temperature of 14 - 16°C.
