Billia Vermentino di Sardegna DOC Cherchi
The Vermentino di Sardegna “Billia” is a heartfelt tribute to the founder of the Cherchi winery, Giovanni “Billia” Cherchi. Produced exclusively from Vermentino grapes grown in the hilly vineyards of Usini (SS), about 200 meters above sea level, this wine represents one of the most authentic and refined expressions of the symbolic grape variety of Sardinia.
It has a bright straw yellow color, embellished with greenish reflections. The bouquet is delicate but persistent, with intense floral scents and fruity notes ranging from apple to peach, enriched with citrus nuances and aromatic herbs that evoke the Mediterranean scrub.
On the palate it is dry, fresh and savory, with a well-balanced structure and a pleasant taste-olfactory harmony. The sip is soft and mineral, slender and with good persistence, perfectly suited to daily drinking but also capable of surprising with its elegance in special moments.
The vinification involves destemming, crushing and soft pressing, followed by fermentation at a controlled temperature in stainless steel (17-18°C) with selected native yeasts. After aging for about six months in steel, the wine is bottled while maintaining its freshness and expressive purity intact.
Recommended pairings:
Ideal as an aperitif and perfect with shellfish, delicate appetizers, light first courses and white-fleshed fish, both boiled and roasted. It also pairs well with white meats and fresh cheeses.
