2023 Vintage Climate Trend and Sparkling Cellar Protocol
The growing cycle of the 2023 vintage was marked by a relatively warm and dry winter, followed by a rainy spring with normal seasonal temperatures that replenished the water reserves of the clay-rich soil. The summer recorded initial heat peaks, later giving way to a mild August and a warm, breezy autumn. Although the weather conditions contained overall vineyard yields, the lower average temperatures encouraged gradual phenolic ripeness, preserving a total acidity of 6.64 g/l and a fascinating aromatic bouquet. The manual harvest in 10 kg bins selects the finest clusters. In the cellar, following a gentle pressing, the free-run must undergoes its primary fermentation in stainless steel tanks. The tirage follows for secondary fermentation in the bottle with a sur lie aging path of 18 months prior to disgorgement and a Brut dosage of 5.2 g/l.
