The DOSS Cabernet Sauvignon Riserva DOC originates from a thoughtful combination of hillside micro-zones, conceived to blend structural depth with phenolic maturity. The foundation of this Riserva rests on two complementary terroirs managed by Cantina Girlan: a fraction comes from the ventilated vineyards of Oltradige, situated at an altitude of 400 meters above sea level, while the second portion is cultivated on the warmer slopes of Bassa Atesina, at approximately 300 meters of elevation. This dual environmental approach allows the Bordeaux varietal to express itself with a perfect balance between olfactory finesse and polyphenolic depth.
Cellar Protocol: Gravity-Fed Vinification and Combined Aging
The processing of the 2023 vintage applies rigorous technological criteria oriented toward maximum extractive clarity. The manual harvest takes place using small bins to preserve the integrity of the berries. After destemming, the must is conveyed exclusively by gravity into stainless steel tanks, avoiding the mechanical action of pumps to prevent tearing the green components. The red skin-contact vinification cycle extends for a period between 15 and 20 days. Following the completion of malolactic fermentation, the wine undergoes an 18-month aging path carried out partly in large oak casks and partly in barriques, followed by a 6-month rest in the bottle before its definitive release.
