The FLORA Chardonnay DOC embodies the most complex expression of Cantina Girlan, derived from the adaptation of this international variety to the alpine terroirs of Oltradige. The vineyards, carefully selected, are situated in a well-ventilated hillside belt at an altitude ranging between 450 and 550 meters above sea level—ideal conditions to ensure a strong diurnal temperature shift. Trained with the Guyot system, the vines are between 18 and 25 years old and take root in mineral-rich soils, originated from morainic deposits resting on a solid volcanic porphyry base. This complex geological signature gives the selection a remarkable mineral tension and a thick extractive density.
Enological Protocol: Whole-Cluster Pressing and Maturation in Large Oak Casks
The processing of the 2023 vintage applies rigorous technological criteria to protect and layer the aromatic bouquet. The manual harvest is performed using small bins to preserve fruit integrity. In the cellar, a gentle whole-cluster pressing is performed, followed by clarification via natural cold settling. The primary fermentation cycle and malolactic conversion take place entirely inside 12 and 15-hectoliter French oak casks. The evolutionary path involves a 12-month aging period on the fine lees in large wood, completing the cycle with a 6-month rest in glass before commercial release.
