The grapes originate from a rigorous selection of hillside plots located in the Oltradige district, at an altitude ranging between 450 and 530 meters above sea level. The agronomic combination is based on a dual exposure of the vine rows, oriented partially east and partially west—an ideal condition to encourage a gradual ripening of the clusters and preserve the fruit's freshness. The roots delve into soils composed of morainic deposits resting on a solid volcanic porphyry rock matrix, elements that impart a sharp mineral quality and a unique regional character to the selection.
Technical Protocol: Whole-Cluster Pressing and Combined Aging
The processing of the 2023 vintage applies rigorous enological criteria oriented toward maximum protection of the most volatile aromatic components. Following the manual harvest in small bins, the grapes undergo a short cold pre-fermentative maceration, followed by gentle whole-cluster pressing. Must clarification occurs through natural cold settling. The primary fermentation cycle is conducted at a controlled temperature inside stainless steel tanks. Subsequently, the mass faces an 8-month aging path carried out partly in stainless steel tanks and partly in small oak barrels, keeping the wine on the fine lees (*sur lie*). In order to safeguard the natural youth and sharp edge of the pour, malolactic conversion is intentionally avoided.
