Alexandre Filaine
Damery, a French town with few inhabitants in La Vallée de la Marne, producing area of the Champagne wine region, south of Champagne and Montagne de Reims, north of the banks of the MarnDamery river.
A passion that resulted in the desire to produce champagne for his own use, the handyman Fabrice Gass discovers that he produces grapes and a champagne of high quality.
Fabrice has a long history and wine making experience in the field of sparkling wine. He lent his skills as a good champenois to Maison Bollinger. To this day he maintains professional consultancy relationships with the famous Ayala maison.
The area under vines owned by Alexandre Filaine is very small, only one and a half hectares, in which three varieties are planted: 45% Pinot Noir, 30% Chardonnay and the remainder in Meunier. The low yields for these plant choices are optimized and aimed at assemblies, which more or less reflect these proportions.
Small plots for which the oenologist Fabrice Gass is happily '' forced '' to conduct the work in the field and in the cellar in a natural way, with traditional technology respecting nature, following the dictates of the weather.
The Fabrice Man's operational capacity in the cellar is also limiting, but the tools available to him sharpen his wits. Small press, manual dosages of 4 and 6 g / l according to the extra-brut method and fermentation takes place in used barriques and tonneaux. From here comes the advantage of a non-refermentation, technically `` malolactic '' not carried out, that is, that does not happen, according to Fabrice, his wines have a very low pH, plus the fermentation in wood leads to a decrease in pH which it does not trigger malolactic fermentation. It is understood that all subsequent oenological operations are manual and record long times, maturation on the yeasts last three years and remuage and dégorgement are carried out by the expert hand of Fabrice.
The total annual production is 5,000 bottles divided into three labels, one of which is vintage, 2007 harvest.
