Grillesino
The Grillesino, is the ambitious project in which Saverio Notari, son and enologist of Giancarlo Notari, returned to Florence to support his father in the development of the CompagniaDel Vino in Maremma, in Magliano, Tuscany. They buy a farm, the Grillesino, of about twenty hectares. Vineyards belonging to the DOC Morellino di Scansano, planted with Sangiovese and Cabernet Sauvignon varieties. The clones are selected in collaboration with the University of Agriculture of Florence and Bordeaux, leading to the identification of the Cabernet Margaux clone used for the Ceccante. In 2004 the works for the expansion of the winery were completed in a parcel of land called Scalavite, incuinasce the homonymous white wine, and on which were planted Pinot Blanc and Viognier and Sangiovese varieties. The wines are vinified with modern technologies and do not undergo filtering treatments so that the typicality is one of the main characteristics. Today, CDV is led by Saverio Notari with the technical support of the Marchesi Antinori Spa.
