The Aromatic Elegance and Vibrant Freshness of Coastal Vermentino
This wine originates from the sandy and pebbly soils of Bibbona, within the Bolgheri plain, where marine breezes shape the unique microclimate of the Upper Maremma. The 2025 Occhione marks a successful turning point for Tenuta Campo di Sasso—closely linked to the prestigious signature of Lodovico Antinori and Tenuta di Biserno—historically renowned for its great red wines. The name pays tribute to the rare waterfowl that nests among the dunes of Marina di Bibbona, a symbol of wild and protected nature.
To preserve its crisp acidity, the grapes are hand-harvested at the first light of dawn and subjected to a gentle pressing in the absence of oxygen. Vinification and a brief aging period of approximately 5 months take place entirely in temperature-controlled stainless steel tanks. The result is a vibrant, crisp, and deep white wine, perfect for those seeking excellence among Mediterranean grape varieties.
Coastal Vineyards and the Marine Microclimate of Bibbona
The rows grow close to the Tyrrhenian Sea on sandy, medium-textured soils, enriched by alluvial pebbles typical of the Bolgheri conglomerate. During the 2025 season, the combination of warm summer days and excellent nocturnal temperature excursions favored the development of intense, clean aromas with great varietal precision.
Furthermore, the constant ventilation from the Livorno coast naturally protects the clusters from moisture, ensuring perfectly healthy grapes. This extraordinary ecosystem positions Occhione at the pinnacle of regional winemaking, making it a premier choice for the finest restaurant wine lists.
Organoleptic Characteristics of Occhione Campo di Sasso 2025
Sommeliers and industry experts appreciate this blend from the Tuscan coast for its vertical palate and the expressive purity of its fruit.
- Alcohol Content and Blend: 13.00% Vol. / 90% Vermentino, 10% Viognier.
- Visual Examination: Pale straw yellow color with bright silver and greenish highlights, crystalline and showing excellent dynamism when swirled in the glass.
- Olfactory Examination: The bouquet opens crisp and fresh with intense aromas of citron, grapefruit, pear, and white peach, enriched by floral notes of orange blossom, balsamic hints of lemongrass or mint, and a distinct briny trail.
- Palate: On the palate, it enters straight, fresh, and lively, with a beautiful acidic backbone supporting the sip, an enveloping texture, and a savory, long, and pleasantly citrusy finish of excellent persistence.
Excellent Food Pairings
The great freshness and balance of this iconic coastal white require pairings capable of enhancing its intrinsic mineral and marine profile.
- Raw Seafood and Appetizers: Perfect with oysters, sea bass carpaccio, scampi tartare, and warm seafood salads.
- Seafood First Courses: Pairs magnificently with seafood linguine, seafood risotto, or spaghetti with bottarga, which enhance the structure of the bottle. If you are looking for a red wine to accompany subsequent meat courses, discover the unforgettable Insoglio del Cinghiale from the same estate.
- Fish Main Courses: Enhances salt-crusted line-caught fish, baked turbot with potatoes, and light fried seafood, recalling the clean drinkability typical of the region's finest selections.
- Cheeses and Vegetables: Ideal in pairing with fresh goat cheeses, savory herb tarts, and spring first courses with wild greens.
Service Temperature and Recommended Glass
It is recommended to serve this Toscana IGT at an optimal temperature between 10°C and 12°C.
Glass
The ideal glass is a medium-opening chalice for young, structured white wines. This shape allows the fruity and saline aromas to concentrate towards the nose, balancing the fresh and mineral entry of the wine in the mouth to guarantee a perfect tasting experience.
