Agronomic Features and Long Martinotti Method Protocol
The blocks are established on deep clay-heavy fields, a precise pedoclimatic matrix that secures constant water regulation while imparting an excellent structural density of extracts to the volume. Hand-harvesting targets a highly monitored operational window to lock in peak phenolic ripeness, protecting a balanced total acidity of 5.50 g/l. In the cellar, the primary fermentation occurs inside temperature-controlled stainless steel vats. The secondary fermentation takes place in autoclaves using the Martinotti-Charmat method for an extended duration of 120 days; this maturation on the lees, followed by an additional 4 months of bottle resting, enriches the structure with creamy nuances without masking its original citrus core.
