Pedoclimatic Matrix and Fine Lees Technical Protocol
The blocks thrive on hillside medium-textured soils with a strong clay inclination, a perfect substrate to ensure constant water regulation for the vines while transferring a solid mineral backbone to the clusters. Hand-harvesting targets an optimal operational window to lock in peak phenolic ripeness, protecting a total acidity of 5.70 g/l and a balanced alcohol weight. In the cellar, the primary fermentation occurs entirely inside temperature-controlled stainless steel vats to protect its most volatile aromatic fractions. The technical workflow requires a 7-month maturation phase on the fine lees (*sur lie*), driven by systematic bâtonnage routines to encourage cell autolysis, followed by an additional 4 months of bottle resting.
