Agronomic Features and Technical Processing in Stainless Steel

The blocks are established on deep clay-heavy fields, a precise pedoclimatic matrix that secures constant water regulation while imparting an excellent structural density of extracts to the volume. Hand-harvesting targets a highly monitored operational window to lock in peak phenolic ripeness, protecting a balanced total acidity of 5.70 g/l. In the cellar, the free-run must undergoes alcoholic fermentation entirely inside temperature-controlled stainless steel vats to protect its most volatile aromatic fractions. The technical protocol enforces a 7-month maturation phase on the fine lees, driven by systematic weekly bâtonnage routines to encourage cell autolysis, followed by an additional 4 months of bottle resting.
