Why I suggest Château-Chalon 2009
Varietal wine in the very fine and unusual French Jura, very rare. It can be part of all the whites of the jura, but is usually reserved for the extraordinary vin jaune similar to Sherry. Undoubtedly, the Savagnin del Jura, like the Austrian Traminer, is famous for its aromas and longevity. And a Savagnin Rosè non-musqué is still cultivated in Alsace, where it is also called Klevner d'Heiligenstein.
The Sommelier: Wine produced from grapes grown with organic farming practice. Aging 6 years minimum in oak barrels on a layer of yeasts. Sharp straw color, with golden and brilliant reflections. Intense aromatic scent and hints of rose and lime blossom. Soft taste, balanced with a delicately aromatic aftertaste. Excellent alcohol content 14.00% vol. and very low in added sulfites 0.020gr / lt Aging peak 50 years.
Recommended pairings: It can accompany the whole meal with finesse, better if next to lean appetizers, fish first courses, smoked, dishes garnished with garlic and parsley, white meats with creamy sauce and mushrooms, spicy food (curry) and dishes cooked with cheese (Comté)
Uncork and serve at a temperature of 13 ° C in a Renano glass.
