The 448 s.l.m. Rosato IGT owes its name to the precise geographical altitude where the historic founding estate of Cantina Girlan stands. This rosé wine is born from the thoughtful blend of the three most significant and historic red grape varieties of the Oltradige territory. The pedoclimatic signature of the vineyards is defined by soils with a high mineral content, originated from the slow deposition of sediments dating back to the glacial era, which impart a distinct freshness and elegant gustatory tension to the blend.
Technical Protocol: Prefermentation Maceration and Saignée Technique
The cellar processing of the 2025 vintage follows a dual technical path aimed at combining aromatic finesse and structural depth. The manual harvest takes place in small bins to preserve the perfect integrity of the clusters. A first fraction of the grapes is destemmed and subjected to cold skin-contact maceration for 12 hours before undergoing gentle pressing. The second portion of the blend is obtained via the saignée technique from premium red wine vats. The resulting must undergoes fermentation and subsequent aging exclusively in stainless steel tanks.
