This red wine interprets the signature native variety of the Oltradige region through a selection of grapes cultivated across different plots within the production zone. The pedoclimatic signature is defined by mineral-rich soils, originated from the slow deposition of glacial sediments, which impart remarkable finesse and expressive dynamism to the varietal.
Technical Protocol: Vinification and Concrete Aging
Cellar management follows an approach tailored to enhance the varietal purity of the grape. The manual harvest takes place in small bins to preserve cluster integrity during transport. After destemming, alcoholic fermentation is carried out at a controlled temperature inside stainless steel tanks. To achieve a stable color and a well-defined tannic texture, the must undergoes an extended skin-contact maceration. Following malolactic fermentation in stainless steel, the subsequent aging and stabilization phase takes place in concrete vats prior to bottling.
