The Plozza Franciacorta DOCG Satèn enters the world of fine sparkling wines as a model of extraordinary smoothness, olfactory finesse, and distinct territorial identity. This historic winery developed the Satèn cuvée to explore the creamier, more alluring, and elegant side of the morainic denomination by exclusively selecting the finest white grape varieties. The core of this project relies on a gentle secondary fermentation in the bottle guided by a lower sugar dosage—a deliberate technical choice aimed at creating a caressing mousse and an aristocratic profile. In the glass, this Satèn presents itself as a sparkling wine with a poised temperament yet an enveloping palate, crafted to combine solid structure with impeccable overall harmony.

Agronomic Notes: Limestone Terraces and the Silky Mousse Protocol

The vines take root in hillside amphitheaters characterized by loose soils with a strong morainic matrix rich in mineral pebbles and silt—ideal pedoclimatic conditions to enhance aromatic precursors and protect the vibrant acidity of the grapes. An early manual harvest carefully selects the finest fruit during the cool early morning hours. In the cellar, after a gentle pressing, the free-run juice undergoes primary fermentation in temperature-controlled stainless steel vats using selected yeasts. The subsequent secondary fermentation in the bottle follows strict Metodo Classico standards, maintaining a pressure below 5 atmospheres and requiring extended contact with the lees to smooth out the body while preserving an alcohol content of 12.50% Vol.
