Why the Winemaker Recommends Tasto di Seta
Because it represents the best of Malvasia di Candia Aromatica, a grape variety to which Castello di Luzzano has always dedicated special care in its vineyards in Ziano, on the Colli Piacentini in Valtidone. The terra rossa clay soils and the altitude between 220 and 270 meters bestow the grapes with intense tannins and excellent acidity—the ideal foundation for a wine of great elegance. Created in 2004 to join the sparkling, dry, and sweet styles that traditionally characterize this grape, it stems from a partial drying of the grapes on the vine (10%), hand-harvested and vinified with extreme care: low-temperature fermentation and long aging on the noble lees throughout the winter. A journey that has earned it important accolades, including 3rd place among the best Italian white wines in the Annuario dei Migliori Vini Italiani 2018.
Characteristics of Malvasia White Wine
It presents a bright straw-yellow color. On the nose, it is intense and aromatic, featuring floral notes of acacia, cypress, and mint. On the palate, it is smooth, balanced, and remarkably persistent, with a touch of finesse that enhances its elegance. Thanks to the structure and acidity of the grape variety, it keeps exceptionally well even beyond three years from the harvest. Recommended Food Pairings for Malvasia di Candia Aromatica Wine
Perfect as an aperitif, it pairs splendidly with eggs and cured meats from Piacenza. At the dinner table, it shines with risottos, fresh pasta, and butter and sage lean ravioli, but it also elegantly accompanies white meats, shellfish, and oilier fish.
