Agronomic Notes: The Historic 2015 Vintage and Extended Lees Aging
The vines take root in hillside amphitheaters characterized by loose soils with a strong morainic structure rich in gravel, mineral pebbles, and silt—an exceptional pedoclimatic habitat that ensures perfect natural drainage. The 2015 growing season was outstanding, producing healthy grapes rich in extracts with a vibrant acidic backbone. An early manual harvest carefully selects the finest fruit during the cool early morning hours. In the cellar, following a gentle pressing, the free-run juice undergoes primary fermentation in temperature-controlled stainless steel vats. Secondary fermentation in the bottle strictly follows the rules of the Metodo Classico, requiring an exceptionally long and slow maturation in the dark cellar in contact with the lees, maintaining an alcohol content of 12.50% Vol.
