Rivera Pungirosa Castel del Monte DOCG 2025
Rivera's Pungirosa is an extraordinary rosé wine created to celebrate the only DOCG in Italy entirely dedicated to a red grape variety vinified as a rosé: Bombino Nero. This Puglia rosé wine represents a milestone in Southern Italian winemaking, clearly breaking away from the old stereotypes of the past. The De Corato family's historic winery enhances the variety's natural ability to maintain exceptional acidity and moderate alcohol content, focusing on an expressive finesse that astonishes with its freshness, precision, and dense minerality.
The vineyards are rooted in the calcareous-clay soils of the Murgia hills, at high altitude, where the cool air currents from the Adriatic Sea preserve the variety's aromatic profile intact. The winery's protocol involves gentle pressing of the grapes with very brief contact with the skins, a crucial step in extracting the delicate color. Fermentation in stainless steel at low temperatures produces a rosé with impeccable formal clarity and extraordinary gastronomic versatility.
Tasting Notes and Sensory Profile
- Abv: 12.00% Vol.
- Appearance: Splendid onion-skin pink color, crystalline and with great luminosity in the glass.
- Aroma Profile: An ample and delicate bouquet with elegant floral aromas of fresh rose and geranium, accompanied by fragrant hints of cherry, wild strawberry, and a light almond note.
- On the Palate: Straight, dry, and extraordinarily drinkable. The palate is savory, supported by a vibrant acidic freshness and a pleasant mineral nuance that leads to a perfectly balanced finish.
Recommended Pairings and Serving Suggestion
The extraordinary versatility of this rosé from the Murgia region makes it a valuable ally for food pairings:
- Seafood and Traditional Cuisine: It expresses itself superbly with fish soups, shellfish, raw seafood, and fried foods. It also pairs regally with traditional Apulian dishes, such as cardoncelli vegetables or light meat-based first courses.
- Aperitifs and Starters: Excellent with cardoncelli mushrooms, vegetable omelettes, slightly aged cured meats, and semi-hard cheeses.
- Serving Suggestion: Serve chilled at a serving temperature of 10 - 12°C (50 - 54°F) in medium-sized glasses (such as Renano or Chardonnay) to allow the aromas to fully unfold.
