The Langhe DOC Nebbiolo BricdelBaio® holds a prominent position within the production philosophy of the Ca’ del Baio winery. This red wine originates from estate-owned vineyards entirely dedicated to the Nebbiolo variety, cultivated with the aim of offering a fresh, dynamic interpretation of immediate stylistic precision. The technical management enhances the fruit's balance through a targeted stabilization process in the cellar, preserving the original aromatic integrity without weighting down the structure of the varietal.
Agronomic Notes and Cellar Protocol
The vineyards are situated on soils composed of gray and blue marls with a calcareous-sandy matrix, featuring a predominantly western exposure. The manual harvest takes place between late September and the first days of October. In the cellar, the destemmed grapes undergo a short maceration; the alcoholic and subsequent malolactic fermentation processes are carried out entirely in temperature-controlled stainless steel tanks. Following a natural cold stabilization cycle, the wine undergoes an aging period of one season before being released onto the market.
