The Cagnulari Isola dei Nuraghi IGT is a still red wine born from the deep bond between the Cherchi Giovanni winery and the Sardinia region. This ancient native Sardinian grape variety, expertly rediscovered and promoted by Giovanni Cherchi, lives again today in an extraordinary expression of its rich extractive potential and territorial character.
The grapes come from splendid hilly soils located approximately 200 meters above sea level, characterized by a good limestone structure combined with clayey fractions. Trained using the espalier system with Guyot pruning, the grapes are destemmed and pressed once they arrive at the cellar. Fermentation on the skins lasts 8-10 days at a controlled temperature (25-28°C), followed by spontaneous malolactic fermentation between autumn and the following spring.
Aging takes place mainly in stainless steel tanks and, to a small extent, in wooden barrels for approximately 6 months. The wine is finally bottled after clarification and very light filtration, preserving its integrity and vivacity and ensuring excellent aging potential over time.
Tasting Notes
It has a very clear, intense ruby red color. The nose expresses good aromatic intensity, where fresh aromas of small red fruits, undergrowth, and spices blend with captivating notes of jam and geranium. On the palate, it is dry and pleasantly savory, supported by a warm and lively structure in which delicate acidity and soft tannins are perceived. The sip is balanced and persistent, with a fresh and clean finish that recalls distinct fruity and floral notes.
Pairings and serving
This pure Cagnulari pairs magnificently with flavorful traditional dishes. It is particularly suitable with:
- Salami appetizers and mixed cold cuts
- First courses with red sauces, meat sauces, and savory dishes
- Legume soups and structured broths
- White and red meats, both grilled and pan-fried
- Medium-aged cheeses
To fully enjoy it, we recommend serving at a temperature of 14-16°C and opening the bottle just before pouring.
