Why the winemaker recommends Cannonau di Sardegna DOC Cherchi Giovanni
Cannonau Cherchi is one of the clearest and most sincere expressions of the symbolic grape variety of Sardinia, produced with artisanal passion in a family-run winery. A balanced, authentic wine capable of evolving gracefully over time.
Fruit of the deep winemaking tradition of Usini, in the heart of Sassari, Cannonau di Sardegna DOC from the Cherchi winery represents an authentic excellence of the island.
Produced from 100% Cannonau grapes, selected and hand-picked on hills at about 200 meters above sea level, this still red wine embodies all the typicality and identity of one of the most famous grape varieties of Sardinia.
To the eye it presents itself with an intense ruby red color with purple reflections. On the nose it releases a broad and complex bouquet: clear hints of ripe fruit, blackberry and jam, accompanied by more delicate notes of plum, quince, cherry and violet, with spicy hints such as cinnamon that enrich the Mediterranean component.
On the palate it is dry, savoury and of great structure. The balanced acidity and the pleasant tannic texture give harmony and depth to the sip. The finish is long, clean and persistent, with a taste closure consistent with the olfactory sensations.
The vinification involves maceration on the skins for 6-10 days at a controlled temperature (25-28 ° C), followed by spontaneous malolactic fermentation. The refinement takes place for about six months partly in steel, partly in wooden barrels or semi-new barriques, to enhance the varietal freshness without compromising the structure.
Recommended pairings:
Ideal with first courses with tasty sauces, roasts of white and red meats, light game and medium-aged cheeses. Also excellent with rich soups based on legumes in the colder months.
Serving temperature 16–18°C, we recommend opening the bottle half an hour before tasting.
