Billia Cagnulari Isola dei Nuraghi IGT Cherchi
An elegant tribute to Sardinian tradition, “Billia Cagnulari” is a wine born from the desire to enhance an ancient and native vine, brought back to light by the founder of the Cherchi winery, Billia Cherchi. Made from pure Cagnulari grapes grown in the fertile hills of Usini, about 200 meters above sea level, this wine delicately expresses the profound identity of the Sardinian territory.
The calcareous-clayey soil and the Mediterranean climate, characterized by strong temperature variations, give the grapes aromatic intensity and freshness. The vinification takes place in stainless steel, with fermentation on the skins at a controlled temperature for 8-10 days and spontaneous malolactic fermentation. The 6-month refinement in steel preserves the varietal purity, giving balance and softness.
To the eye, it presents itself with an intense clear ruby red, crossed by purple hues. The bouquet is rich and enveloping: notes of ripe red fruits, jam, geranium and subtle spicy and balsamic hints. In the mouth it is dry, savoury and harmonious, with a warm structure, delicate tannins and a pleasant freshness that leads to a fruity, clean and persistent finish.
Versatile in pairings, it splendidly accompanies cured meats, first courses with red sauces, legume soups, grilled or pan-fried white and red meats, as well as medium-aged cheeses. Also ideal for convivial or meditative moments, it is recommended to serve it at 14-16°C when young, or at 18-20°C to fully enjoy its evolutionary complexity in a large glass.
