An elegant tribute to Sardinian tradition, "Billia Cagnulari" is a wine born from the desire to showcase an ancient, native grape variety, brought back to life by the founder of the Billia Cherchi winery. Made from 100% Cagnulari grapes grown in the fertile hills of Usini, approximately 200 meters above sea level, this wine subtly expresses the profound identity of the Sardinian terroir.
The calcareous-clayey soil and Mediterranean climate, characterized by significant temperature variations, give the grapes aromatic intensity and freshness. Vinification takes place in stainless steel, with fermentation on the skins at a controlled temperature for 8-10 days and spontaneous malolactic fermentation. Aging for 6 months in stainless steel preserves the varietal purity, imparting balance and smoothness.
Characteristics of the Cagnulari di Cherchi wine
On the palate, it displays an intense, clear ruby red color, interspersed with purple hues. The rich and enveloping bouquet features notes of ripe red fruits, jam, geranium, and subtle spicy and balsamic hints. On the palate, it is immediately dry, savory, and harmonious, with a warm structure, delicate tannins, and a pleasant freshness that leads to a fruity, clean, and persistent finish.

Versatile in its pairings, it pairs splendidly with cured meats, pasta dishes with red sauces, legume soups, grilled or pan-fried white and red meats, as well as medium-aged cheeses. Also ideal for convivial or meditative moments.
