Rivera Fedora Castel del Monte DOC 2025
The iconic and historic label of Rivera Fedora Castel del Monte DOC was created to express the freshest, most agile, and dynamic spirit of the Murgia Barese, interpreting a classic appellation with extraordinary geometric clarity. The winery offers this symmetrical blend in which the local varieties enhance their natural fragrance without giving in to commercial softness. This contemporary approach translates into a white wine, agile and elegant, ideal for sommeliers and wine enthusiasts seeking an expression of a native Apulian grape capable of ensuring a pleasant, refreshing drink with great consistency at the table.
The vineyards are cultivated in the municipality of Andria at approximately 180-200 meters above sea level, on deep limestone soils, trained using pergola and espalier systems. The traditional blend is 65% Bombino Bianco, 20% Pampanuto, and 15% Chardonnay, the latter added to enhance the blend's complexity. Harvest takes place at different times, starting in mid-August with the Chardonnay and concluding in late September with the native varieties. The protocol applied by Cantine Rivera includes fermentation in stainless steel tanks at 18°C for approximately 10 days, followed by aging for 3-4 months in glass-lined concrete vats. The wine is finally chilled and filtered before bottling.

Recommended Pairings and Service
The extraordinary culinary versatility and balance of this white wine from the Murgia area make it the perfect gastronomic companion for light dishes:
- Aperitifs and Starters: Ideal when served chilled as an aristocratic aperitif or to accompany rich seafood appetizers.
- Seafood and First Courses: It expresses itself superbly with fried fish, shellfish, dishes based on local seafood, and soups or light pasta dishes seasoned with garden vegetables.
- Second Courses and Side Dishes: Excellent paired with vegetable omelettes, flans, soft fresh cheeses, and delicate cured meats.
- Serving Suggestion: We recommend uncorking just before drinking. Serve chilled at a serving temperature of 8-10°C (46-50°F) in medium-sized glasses to enhance the bouquet.
