The manual harvest selects the clusters at their perfect point of phenolic ripeness. In the cellar, processing applies strict technological criteria oriented toward maximum protection of the mass from oxygen. Alcoholic fermentation takes place exclusively in temperature-controlled stainless steel vats using selected yeasts.
