The Sauvignon Blanc Fumé Alto Adige DOC by Schloss Englar is a white wine of extraordinary complexity and stature, masterfully reimagining an international variety through the sharp lens of its alpine terroir. Produced in an extremely boutique run of just 2,660 bottles, this premium white comes from 20-year-old Guyot-trained vines located in Eppan Berg (Appiano Monte) between 500 and 550 meters above sea level, rooted in clay-limestone soils that naturally yield full body, rich texture, and a deep mineral character.
Winemaking: Crafting Depth through Oak and Time
Hand-picked grapes undergo gentle destemming followed by overnight skin contact (maceration) before a soft pressing to extract the variety's finest aromatic precursors. Fermentation is triggered exclusively by indigenous yeasts, taking place 50% in stainless steel tanks and 50% in premium French oak tonneaux. The wine then matures for 16 months on the fine lees in a combination of oak and steel. The completion of malolactic fermentation combined with regular battonage (lees stirring) beautifully rounds out the wine's vibrant profile, lending a luscious creaminess and palate depth without overshadowing its mountain-grown freshness. The wine was bottled in April 2025.
Tasting Notes: Vibrant Minerality and Elegant Evolution
In the glass, the Schloss Englar Sauvignon Fumé 2023 proves to be exceptionally mineral and alive, elegantly evolving with every swirl. The nose opens with a rich bouquet dominated by wild sage leaves, ginger, and grapefruit zest, layered with fresh notes of hyssop, white peach, orange blossom, and wet stones. On the palate, lively notes of starfruit and savory pink peppercorn blend seamlessly with wild sage flower nectar and guava. A striking, flinty minerality and a creamy sweetness intertwine to offer a brilliant, long-lasting finish. This structural white wine has a cellaring potential of up to 8 years.
Food Pairings and Sommelier Serving Tips
Thanks to its barrel-aged complexity, this gastronomic Alto Adige white wine pairs beautifully with rich seafood dishes, shellfish, and roasted fish. It acts as an exceptional match for creamy risottos (such as seafood or herb-infused varieties) and delicate white meat courses.
We recommend serving it slightly less chilled than lighter whites, ideally at 10–12°C, to fully appreciate its multifaceted aromatic layers.
The Story of the 2023 Vintage
The 2023 vintage was defined by extreme climate conditions. A dry start to the season paved the way for early budding, which was followed by a cool, rainy spring and a humid summer with frequent showers. This required rigorous and attentive hands-on management in the vineyards to capture the true essence of the estate's unique mountain terroir. Fortunately, a dry autumn followed with perfect harvest conditions, bringing warm days and chilly nights. Overall a fresh and fruit-forward vintage, 2023 delivered lighter-bodied yet structured wines that beautifully showcase their alpine roots.
