De Stefani Olmera beautifully channels the essence of the Le Ronche estate, located in the fertile district of Fossalta del Piave. The core of the project lies in the Tai grape variety (historically known as Tocai Friulano), which undergoes a meticulous drying process in the fruit cellar to favor the development of noble rot. This component imparts a monumental body and exceptional extractive depth. It seamlessly blends with the fresh, aromatic, and fragrant fraction of Sauvignon Blanc, vinified in steel to keep its geometric citrus drive completely intact.
The technical management in the cellar involves a precise maturation period for the blend inside selected oak casks, a choice that does not mask varietal traits but consolidates the molecular stability of the tertiary aromas instead. Following the strict philosophy of the family, vinification is carried out according to natural biodynamic principles, eliminating systemic chemical treatments in the vineyard and operating in the cellar without added sulfites. - Olfactory Profile: A distinctly aromatic, broad, and layered bouquet. The opening is led by sharp citrusy slashes and fresh scents of elderflower typical of the French variety, quickly evolving into refined tertiary notes of dried fruits, acacia honey, and subtle iodized undertones brought by the Tai grape's noble rot.
