Tenuta San Fabiano
The historic cellar of the San Fabiano Estate owned by the Borghini Baldovinetti de ’Bacci Counts, a Florentine aristocratic family, residing in Arezzo and Milan, is located in Castellina in Chianti in Tuscany.
A farm of 160 hectares, it dedicates about a third of the surface to quality viticulture. Led by the current owners Guido Serio and Isa, his wife.
The vines have been renewed, and the cellar has brought new wine-making and packaging technologies.
The vines in the rows are grown through the use of agronomic protocols in order to manage the vegetative part well and to protect the surrounding environment. Quality wines are the result of knowledge and research. Making wine is not a joke, since the primary objective is to get to the harvest with healthy and straightforward grapes knowing the ripening point of the grapes.
In the cellar, every production step from winemaking to aging, to bottling and aging, contributes to achieving the highest quality standards. "San Fabiano" presents the products with sober, elegant and at times aristocratic labels such as vintage Chianti Classico, Chianti Classico Riserva, IGT wines, Vin Santo, grappa. The guarantee of quality and traceability evokes a territory already culturally and historically recognized in the world. Conversion to organic is the company choice that guides production on the path of quality and sustainability.
