The distilleries de Varda belong to the noble and aristocratic Dolzan family, as early as 1678, in Mezzolombardo they were owners of vineyards and wine producers. And since 1800 Michele Dolzan, (grandfather), started his distilling art, now in its fifth generation.

Following the family teachings, heir to the distilling traditions, Cav. Luigi Dolzan, together with his sons Michele and Mauro, continue the activity also with the use of new technologies. Thus leading to their distillation method "Villa de Varda". Four basic steps for the production of grappa and obtain a high quality product.

Selecting for the use fresh, healthy and ripe pomace of single vine squeezed gently and fermented at a controlled temperature.

Villa de Varda distillation is performed with discontinuous copper stills. It takes place very slowly and allows the volatile components responsible for the perfumes, a correct evaporation and condensation, keeping unchanged the organoleptic characteristics of the Trentino native vine.

Subsequently, the freshly obtained grappa with discontinuous distillation is colorless, delicate perfume, dry taste, frank, gentle and clean. It is left to mature in sterile stainless steel containers. Then the alcohol content is reduced and finally the filtration.

The Cav. Dolzan has no doubts; the best distillate in the world is Grappa; convinced of the superior quality of that produced with his own method, and ready to sign each bottle.
