Highlight of the tasting by Roberto Voerzio This Barolo Sarmassa is aged only in barrique. Most other wines are aged on a mix of large barrel and barrique. Beautiful pronounced nose, exudes elegance.
The Sommelier:
Red vermilion, plum, leather, forest, black cherry, blackcurrant and a pinch of liquorice on the nose. Well integrated tannins. Medium acidity. Great velvety sensation. Black cherry, blackberry, fig, olive, pepper, leather, vanilla, licorice, slate, flint, coconut, hazelnut and a subtle hint of violet and menthol on the palate. Fantastic! Young man in expression.
Recommended pairings:
Enchanting wine with polenta, lamb chops and seared Treviso red radicchio, strascinati with turnip tops; cabbage and pork shank; excellent with dried fruit.
Uncork and leave to air before serving at a temperature of 18 - 20 °C. in a large Ballon glass.
