The oenologist recommends Barolo Riva del Bric
Riva del Bric, everything you can expect from a high quality Nebbiolo. This big brooding beast of a wine has personalities to burn. He may still be just a kid, but there's a lot of depth and richness here. Be patient, not a fan of classic style, leave in the cellar and forget.
Characteristics of Nebbiolo wine:
Barolo Riva del Bric spices and red fruits, very aromatic, but very old, because the tannins and structure are very firm (but not overwhelming). Reserved and shy, this wine takes a decade or two to reach its potential. Wide and intense. Satisfying, almost classical, although it is not austere.
Suggested pairings with Nebbiolo wine:
At Paolo Conterno's Barolo Riva del Bric the freshness dictated by the flavor is combined with a white truffle ... and lots of stuff. Ossobuco alla Milanese, Apulian Barciola in tomato sauce. Baked pasta timbale, Florentine rib eye, barbecue lamb ribs and Calabrian pork sausages.
Uncork and decant for at least 2 hours before serving at a temperature of 18-20°C, in a large Ballon goblet.
