Cantina Girlan offers a rigorous interpretation of Pinot Grigio Alto Adige DOC, distancing itself from commercial interpretations to enhance the purest expression of the Oltradige terroir. The vineyards are located on the hills of Appiano and Girlan, on morainic soils composed of mineral-rich glacial deposits, porphyry, gravel, and a clay fraction. This geological mosaic gives the wine a distinctly savory character.
The area's microclimate is characterized by abundant daytime sunlight, which ensures proper phenolic ripening of the grapes, offset by significant nighttime temperature variations. The cold Alpine winds that descend from the mountains create a crucial temperature difference, capable of preserving the fruit's acidity and locking in the aromatic precursors within the skins, giving the wine freshness and longevity.
Vinification and Aging Protocol
In the cellar, we follow minimal intervention protocols, aiming to respect the integrity of the raw material. The grapes are harvested entirely by hand, selecting the bunches in the vineyard and transporting them in small crates to avoid premature skin damage. A soft whole-bunch pressing then follows to extract only the free-run must, preserving the most acidic and elegant fraction.
Alcoholic fermentation takes place at a controlled temperature in stainless steel tanks to maintain the grape variety's natural tension and freshness; malolactic fermentation is not performed. The wine ages for several months on its fine lees in stainless steel tanks: this rest allows the release of macromolecules and proteins that impart volume, structure, and natural stability to the palate, without the aromatic influence of wood.
Characteristics of Girlan Pinot Grigio
The visual profile highlights a luminous straw yellow color with bright greenish highlights, indicative of freshness and youth. On the nose, the organoleptic examination reveals a fine and layered bouquet, dominated by fruity notes of Williams pear and nuances of white flowers and dried hay, resting on a mineral base reminiscent of flint.
On the palate, the entry is vertical and excellently bodied. The solid structure and volume acquired during aging on the lees are perfectly balanced by a pronounced Alpine acidity. The palate unfolds with a taut and savory progression, concluding with a dry, clean, and persistent finish, characterized by a typical and aristocratic hint of bitter almond.

The technical profile of Girlan Pinot Grigio, marked by mountain freshness, lack of oak, and marked salinity, calls for dishes that can interact with its extractive structure without overpowering its varietal finesse.

- Fresh goat's cheeses with aromatic herbs (thyme and marjoram): The notes of hay and white flowers of Pinot Grigio complement the typical aromas of goat's milk, while the wine's acidity parallels the natural acidity of the cheese, leaving the mouthfeel clean.
Temperature and serving protocol
The perfect serving of Girlan Pinot Grigio Alto Adige DOC requires technical precision in thermal management and glassware selection to allow the wine to express its Alpine soul.
The ideal serving temperature should be between 10-12°C. Excessive cold (below 9°C) would inhibit the development of the pear and flint aromatic precursors, hardening the acidity. Conversely, a temperature above 13°C would bring out the alcohol, weighing down the vertical progression of the sip.
Choosing the right glass
The ideal glass is a medium-sized white wine glass with a tulip body. The wide base of the bowl provides the right amount of surface area for oxygen to release the aromas in a controlled manner. The upper section, narrowing slightly like a chimney, concentrates the bouquet towards the nose and directs the flow of the liquid directly towards the center of the tongue, enhancing the structure and balancing the wine's pronounced flavor.
