Why I recommend Barolo DOCG Castelletto 2020 Manzone
Good examples of what one might expect from a good Barolo. The winery is located in the south of the area, we are in Monforte d'Alba (city of truffles). Strength, balance, personality and evolution for this Nebbiolo Top Docg, Barolo wine produced with 30/40 days of maceration in steel tanks. Aged for 30 months partially in large 50hl oak barrels and the remainder in 500 / 700l French oak. Further maturation in the bottle for 6 months.
The Sommelier: Medium garnet red in the glass. On the nose hints of plum jam, then black currant and violet, geranium and coffee, lots of leather and licorice, balsamic. In the mouth it is austere but accessible, of great power, the fruit is intact and disruptive, but what captivates the most is the spiciness and above all the flavors of leather and licorice that pervade the sip. Biting tannins, moderate freshness and a long finish complete the picture of this splendid Barolo. This was a fantastic bottle, it has vanilla overwhelming the nose. Perfect balance and must be left open for 1/2 hours. Very fine sober wine and notes of oak and tobacco to the taste. Excellent work in refinement, clean and always fresh.
Recommended pairings: Barolo DOCG Castelletto 2020 Manzone Argentine beef and grilled polenta; Baked pan with potatoes, mushrooms and truffles. Horse meat chops; Fresh pasta and fresh tomato sauce, Sardinian pecorino, celery and black olives.
Uncork Barolo DOCG Castelletto 2020 Manzone and decant before serving at a temperature of 18 - 20 ° C, in a large Ballon glass.
