Description

The Revival of Favorita in the Langhe Region: The Profile of Brichet Cuvée

The Vite Colte Brichet Langhe Favorita DOC stands within the northwestern Italian white wine landscape as a model of extraordinary freshness, varietal sharpness, and gastronomic agility. This esteemed wine cooperative coordinates the careful work of its associated winegrowers, merging traditional knowledge and the passion of the Langhe farmers with a strict, modern cellar protocol. The project focuses on the desire to highlight the true identity and native character of the Favorita grape (a local biotype of Vermentino), turning it into a still wine with an aristocratic profile and a vibrant mouthfeel. Brichet commands attention in the glass as a white wine of impeccable formal clarity, designed to accompany the daily table with fineness and dynamism.

Hillside Pedoclimatic Notes and Protective Cellar Protocol

The vineyards develop on hillside plots characterized by loose soils with a sandy and marly-limestone matrix—a unique pedoclimatic habitat ideal for emphasizing the intensity of volatile aromatic precursors and safeguarding the sharp acidic freshness of the berry. The manual harvest selects the clusters at their perfect point of phenolic balance. In the cellar, processing applies strict technological criteria oriented toward maximum protection of the mass from oxygen to preserve the primary fragrance of the white grape. Alcoholic fermentation takes place exclusively in temperature-controlled stainless steel vats using selected yeasts. Aging in steel strengthens the grape's mineral architecture without the use of oak, safeguarding an exceptionally agile mouthfeel and an alcohol content of 11.00% Vol.

Sensory Profile and Organoleptic Parameters

Evolution carried out only in small stainless steel containers combined with the marly nature of the terroir yields a white wine with a crystalline profile, available here within the selection of the most prestigious Piemonte white wines.

  • Blend and Classification: 100% Favorita / Langhe DOC / Still organic white wine.
  • Analytical Data (Current Vintage): Alcohol Content: 11.00% Vol. / Exclusive maturation in stainless steel / Volume: 750 ml.
  • Visual Assessment: Pale straw-yellow color, limpid and of excellent brilliance, enriched by bright and vivid greenish highlights upon swirling in the glass, demonstrating a fine chromatic freshness.
  • Olfactory Framework: Broad, clean, and markedly fragrant bouquet. A consistent array emerges on the nose, dominated by sharp consistent scents of fresh wildflowers, chamomile, and white-fleshed fruit, perfectly integrated with pleasant background citrus nuances.
  • Palate Characteristics: The tasting reveals a fresh, pleasantly dry profile endowed with a beautiful gustatory fluidity. The progression displays a harmonious, medium-light body where a subtle smoothness marries a vibrant acidic backbone that revitalizes the palate in perfect balance. The pour advances with exceptional fluidity toward a savory, straight, and impeccably clean finish.

Service Advice and Stable Gastronomic Pairings

The structural fluidity, smooth texture, and sharp sapidity of this Langhe Favorita determine remarkable service versatility throughout the meal, making it an ideal partner for seafood cuisine and fresh soft cheeses.

  • Stable Pairings: It pairs magnificently alongside cold Mediterranean appetizers, rich seafood dishes, mollusks, steamed crustaceans, and traditional coastal first courses like seafood risotto. It excels paired alongside freshwater or marine fish courses and delicate gourmet preparations such as trout mousse with caviar or snails à la bourguignonne. It displays fine synergy when paired alongside fresh or soft cheeses with a slightly acidic taste like robiola, crescenza, and stracchino, as well as smoked provola and smoked cheeses in general.
  • Serving Method: To promote the development of the rich floral aromatic framework and enhance the responsiveness of the wine, the use of a medium-sized tasting glass of Tulipano type and a serving temperature of 10 - 12°C are highly recommended.
