The oenologist recommends Paolo Scavino Barolo DOCG Ravera 2020
In a masterclass and tasting by Paolo Scavino: Ravera is their new high altitude site (420 m) located in Novello with east exposure, fewer hours of sunshine resulting in slow ripening. Young scent, acute acidity and still tannic, this will require more age in the bottle to give body to the tannins and develop greater complexity.
Characteristics of the Nebbiolo di Barolo wine:
Piedmont red wine Barolo Ravera by Paolo Scavino from the highest vineyard on the estate, facing east. Access to water from the Tanaro river and melting snow from the Alps. Smoke, spices, herbal nose. Powerful and precise tannin. Black cherry, violet dark red fruit. Persistent but concentrated finish.
Suggested pairings with Nebbiolo di Barolo wine:
Excellent Barolo DOCG Ravera 2020 Paolo Scavino on beef fillet. Roasted duck breast with beetroot and blackcurrant puree.
Uncork and decant Barolo DOCG Ravera 2020 Paolo Scavino hours before serving at a temperature of 18 - 20 ° C in a large Ballon glass.
Paolo Scavino Cellar:
… 1921 in Barolo in Castiglione Falletto. Farmers lent to agriculture for a hundred years, a true family passion. Errico Scavino, heir, began as a young man to walk in the footsteps of the founders.
